Simple Roast Chicken

Roast chicken is a easy way to start off a meal. No hassle, no clean up. I cut up the chicken into 4 and this made it even easier to roast.


Ingredients

1 whole chicken, cleaned and cut to 4 quarter ( leave the skin on)
3 cloves garlic, minced
3 tbsp olive oil
1/2 tsp lemon juice
1 tbsp garlic powder
1 tbsp onion powder
3/4 tsp salt
2/4 tsp paprika
1/4 tsp oregano, optional
1/4 tsp pepper

Method

In a bowl, mix all the seasoning.
Pat dry the chicken, drizzle the olive oil and lemon juice on the chicken and rub. Stuff the minced garlic under the chicken skin. Rub the seasoning mixture on the chicken.
Roast the chicken at 425 degrees for about 1 hour. It should be done when the juices run clear if you cut between the leg and thigh.

Note : This meal can be jazzed up by roasting root vegetables alongside the chicken or using any kind of spice.
